Steak Frites

Steak fries don’t get any grander than at Citrus at Social. Executive Chef Omri Aflalo’s attention to detail is impalpable. The steak frites have been a stable here for 8 months, causing grown women to ask for more. Made from GPOD rustic Idaho potatoes, known for their high starch content, these super crisp on the outside and tender on the inside potatoes are soaked overnight in cold water to retain that crispness, then Belgium double fried at 275 degrees in clarified butter, seasoned with sugar and vinegar and served with homemade tomato sauce or aioli dipping sauce. Through painstaking research on competitor’s tomato sauce and a little molecular gastronomy thrown in for good measure (xanthan gum), tomato paste, sugar and vinegar, the result is a slightly sweet sauce that equals out the salty deep fried moreish devils that are “selling like hot cakes.”

At Ketchup, VIP guests are spoilt with Executive Chef Chris Tunnell’s truffle fries. Longer than the average fry and made from Idaho russet potatoes, seasoned with fresh thyme, Maldon sea salt, and fresh cracked black pepper. White truffle oil and parmigiano regiano are cause for addiction here and served with Ketchup’s signature dipping accompaniments of chipotle, ranch, original, mango, and maple. You won’t find these delicately addictive fries on the menu but you can all enjoy the luminescent floor, sleek and streamlined Ludwig Mies van der Rohe designed chairs, Plasma TVs dotting the walls, and inventive tomato paraphernalia. It’s American Grill dining for the 21st century crowd.
